Mama Meals: Watermelon Tequila Popsicles

For those of you that don’t know me very well,  I will let you in my (not so secret) secret-I’m a huge fan of tequila.  So this past weekend when I came across this recipe for homemade boozy popsicles, I was pretty darn excited. I mean who doesn’t love a refreshing popsicle?  And one with tequila in it?  Sign me up!  So I gave the recipe a whirl this weekend and I have to say it really hit the spot.

Watermelon Tequila Popsicles

4 cups cubed watermelon

Juice of 2 limes

1/3 cup of fresh mint (I used spearmint)

1 tablespoon Organic Agave Nectar

1/3 cup tequila (I like Cazadores)

In a blender (I always use a Vitamix) combine the watermelon, lime juice, chopped mint and agave syrup.  Blend until smooth.  Strain through a fine strainer and return to the blender.  Add the tequila and blend once more to mix.  Pour the mixture into popsicle molds and freeze overnight.

I also made a more kid-friendly batch of popsicles for Berlin.  Recipe to follow later this week.

  • These look AMAZING!! I also love tequila.

  • Jo-Anne Bartz

I suggest Berlin stays away from those. lol. going to pass that receipe on to Roger Clyne.

  • Hmm, I just made something similar for my son (sans Tequila obviously)…a watermelon sorbet with yogurt, mint and honey. Next time I make it I’m setting some aside for me and adding some vodka (I can’t do Tequila, lol!).
